This Pecan Pie Cobbler combines the best of classic pecan pie with a soft, buttery cobbler base. With layers of caramelized pecans, a gooey brown sugar filling, and a tender crust, this dessert is perfect for holidays or any sweet craving!
Ingredients
For the Cobbler Base:
- 1 cup all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp salt
- ¾ cup granulated sugar
- ½ cup whole milk
- ¼ cup unsalted butter, melted
- 1 tsp vanilla extract
For the Pecan Filling:
- 1 cup chopped pecans
- ¾ cup packed brown sugar
- 1 ½ cups boiling water
- ½ cup maple syrup or corn syrup
- ½ tsp cinnamon (optional)
- 2 tbsp unsalted butter, cubed
Instructions
Prepare the Oven & Dish
Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish.Make the Cobbler Batter
In a bowl, whisk together flour, baking powder, salt, and sugar. Stir in milk, melted butter, and vanilla until smooth. Pour into the prepared baking dish.Add the Pecans & Sugar Layer
Sprinkle chopped pecans evenly over the batter. In a separate bowl, mix brown sugar, cinnamon (if using), and syrup. Sprinkle this mixture over the pecans.Pour Boiling Water
Carefully pour boiling water over the top—do not stir! This creates the gooey, caramel-like filling as it bakes.Bake to Perfection
Bake for 35-40 minutes or until the top is golden and set but the bottom remains gooey. Let cool for 10 minutes before serving.Serve & Enjoy!
Spoon warm cobbler into bowls and top with vanilla ice cream or whipped cream for an extra indulgent treat.
