Ingredients
For the Chicken Marinade:
- 2 boneless, skinless chicken breasts (cut into strips)
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- ½ tsp cumin
- ½ tsp salt
- ½ tsp black pepper
For the Pitas:
- 4 whole wheat or regular pita breads
- 1 cup cherry tomatoes, halved
- ½ cup cucumber, diced
- ¼ cup red onion, thinly sliced
- ½ cup feta cheese, crumbled
- ¼ cup fresh parsley or cilantro, chopped
For the Yogurt Sauce:
- ½ cup Greek yogurt
- 1 tbsp lemon juice
- 1 clove garlic, minced
- ½ tsp dried dill or fresh dill
- Salt & pepper to taste
Instructions
Marinate the Chicken
In a bowl, mix olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper. Add chicken strips, toss to coat, and marinate for at least 15 minutes (or up to 4 hours for deeper flavor).Grill the Chicken
Heat a grill or grill pan over medium-high heat. Cook chicken for 4-5 minutes per side until golden brown and cooked through (165°F internal temperature). Remove and let rest.Prepare the Yogurt Sauce
In a small bowl, mix Greek yogurt, lemon juice, garlic, dill, salt, and pepper. Stir well and set aside.Assemble the Pitas
Warm the pita breads on the grill or in a pan for 1-2 minutes. Fill each pita with grilled chicken, cherry tomatoes, cucumber, red onion, and feta. Drizzle with yogurt sauce and garnish with fresh parsley.Serve & Enjoy!
