For the Chicken Marinade:

  • 2 boneless, skinless chicken breasts (cut into strips)
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp cumin
  • ½ tsp salt
  • ½ tsp black pepper

For the Pitas:

  • 4 whole wheat or regular pita breads
  • 1 cup cherry tomatoes, halved
  • ½ cup cucumber, diced
  • ¼ cup red onion, thinly sliced
  • ½ cup feta cheese, crumbled
  • ¼ cup fresh parsley or cilantro, chopped

For the Yogurt Sauce:

  • ½ cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • ½ tsp dried dill or fresh dill
  • Salt & pepper to taste

Instructions

  • Marinate the Chicken
    In a bowl, mix olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper. Add chicken strips, toss to coat, and marinate for at least 15 minutes (or up to 4 hours for deeper flavor).

  • Grill the Chicken
    Heat a grill or grill pan over medium-high heat. Cook chicken for 4-5 minutes per side until golden brown and cooked through (165°F internal temperature). Remove and let rest.

  • Prepare the Yogurt Sauce
    In a small bowl, mix Greek yogurt, lemon juice, garlic, dill, salt, and pepper. Stir well and set aside.

  • Assemble the Pitas
    Warm the pita breads on the grill or in a pan for 1-2 minutes. Fill each pita with grilled chicken, cherry tomatoes, cucumber, red onion, and feta. Drizzle with yogurt sauce and garnish with fresh parsley.

  • Serve & Enjoy!
    Serve warm with extra yogurt sauce on the side. Pair with a side salad or roasted vegetables for a complete meal.
