Ingredients
Cloud Bread Base:
- 3 large eggs, separated (whites and yolks in separate bowls)
- 1/2 cup cottage cheese, blended until smooth
- 1/4 tsp cream of tartar (helps stabilize egg whites)
- 1/2 tsp salt (enhances flavor)
- 1 tbsp cornstarch or arrowroot powder (optional, for added structure)
- 1 tsp honey or a pinch of sweetener (optional, for mild sweetness)
Blueberry Addition:
- 1/4 cup fresh or frozen blueberries

Preheat oven & prepare baking sheet
Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper. If making a loaf, grease a small loaf pan. -
Blend the cottage cheese
In a small bowl, blend the cottage cheese until smooth to ensure a creamy consistency in the final bread. -
Whip the egg whites
In a clean, dry bowl, beat the egg whites, cream of tartar, and salt until stiff peaks form. This step is crucial for achieving the fluffy, cloud-like texture. -
Mix the wet ingredients
In a separate bowl, whisk together the egg yolks, blended cottage cheese, cornstarch, and honey (if using) until well combined. -
Fold in the egg whites
Gently fold the whipped egg whites into the yolk mixture in batches to keep it light and airy. Avoid overmixing to prevent deflating the batter. -
Add the blueberries
Carefully fold in the blueberries, distributing them evenly without crushing them. -
Shape & bake
Spoon the batter onto the prepared baking sheet in small rounds or pour it into the loaf pan.
Bake for 25-30 minutes until the tops are golden brown and the bread feels set. -
Cool & serve
Let the bread cool slightly before serving. Enjoy warm, or let it cool completely for easier slicing.
