Description

A light and airy cloud bread infused with cottage cheese and fresh blueberries. This gluten-free, low-carb treat is perfect for a healthy breakfast or snack!

Ingredients

Scale

Cloud Bread Base:

  • 3 large eggs, separated (whites and yolks in separate bowls)
  • 1/2 cup cottage cheese, blended until smooth
  • 1/4 tsp cream of tartar (helps stabilize egg whites)
  • 1/2 tsp salt (enhances flavor)
  • 1 tbsp cornstarch or arrowroot powder (optional, for added structure)
  • 1 tsp honey or a pinch of sweetener (optional, for mild sweetness)

Blueberry Addition:

  • 1/4 cup fresh or frozen blueberries

Instructions

  1. Preheat oven & prepare baking sheet
Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper. If making a loaf, grease a small loaf pan.

  2. Blend the cottage cheese
In a small bowl, blend the cottage cheese until smooth to ensure a creamy consistency in the final bread.

  3. Whip the egg whites
In a clean, dry bowl, beat the egg whites, cream of tartar, and salt until stiff peaks form. This step is crucial for achieving the fluffy, cloud-like texture.

  4. Mix the wet ingredients
In a separate bowl, whisk together the egg yolks, blended cottage cheese, cornstarch, and honey (if using) until well combined.

  5. Fold in the egg whites
Gently fold the whipped egg whites into the yolk mixture in batches to keep it light and airy. Avoid overmixing to prevent deflating the batter.

  6. Add the blueberries
Carefully fold in the blueberries, distributing them evenly without crushing them.

  7. Shape & bake
Spoon the batter onto the prepared baking sheet in small rounds or pour it into the loaf pan.
Bake for 25-30 minutes until the tops are golden brown and the bread feels set.

  8. Cool & serve
Let the bread cool slightly before serving. Enjoy warm, or let it cool completely for easier slicing.

Notes

  • Store in an airtight container at room temperature for 2 days or refrigerate for up to 5 days.
  • Freezing tip: Wrap individual slices in plastic wrap and freeze for up to 1 month.
  • For extra flavor, serve with Greek yogurt, almond butter, or a drizzle of honey.
  • Want a slightly firmer texture? Add 1 tbsp almond flour for a bit more structure.
