Description
These soft and chewy Easter Jello Cookies are bursting with fruity flavors and vibrant pastel colors! Made with flavored gelatin, these cookies are fun to make and even more fun to eat. A great treat for springtime celebrations!
Ingredients
Cookie Dough
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 (3 oz) package strawberry Jello
- 1 (3 oz) package lemon Jello
- 1 (3 oz) package lime Jello
- 1 (3 oz) package grape Jello
- 2 large eggs
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon vanilla extract
Optional Toppings
- Powdered sugar for dusting
- Sprinkles for decoration
Instructions
Preheat & Prepare
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.Cream the Butter & Sugar
In a large bowl, cream together the softened butter and sugar until light and fluffy.Add Eggs & Vanilla
Beat in the eggs one at a time, followed by the vanilla extract, mixing until well combined.Mix the Dry Ingredients
In a separate bowl, whisk together the flour, baking powder, and salt.Divide & Flavor
Divide the dough into four equal portions. Mix one Jello flavor into each portion, kneading until the color is evenly distributed.Shape the Cookies
Roll dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart. Flatten slightly with a spoon or your palm.Bake
Bake for 8-10 minutes, or until the edges are set but the centers are still soft. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.Decorate & Serve
Once cooled, dust with powdered sugar or add festive sprinkles for extra fun. Enjoy!
Notes
- You can use any Jello flavors for different colors and flavors. Try orange, raspberry, or blue raspberry for more variety!
- For extra softness, do not overbake—cookies will continue to firm up as they cool.
