For the Chicken
- 2 large boneless, skinless chicken breasts (halved lengthwise)
- 1 cup all-purpose flour
- 2 large eggs
- 2 tbsp milk
- 1 ½ cups Italian-style breadcrumbs
- ½ cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp dried oregano
- ½ tsp salt
- ½ tsp black pepper
- ½ cup vegetable oil (for frying)
For Assembly
- 4 hoagie rolls or sub buns
- 1 ½ cups marinara sauce
- 1 ½ cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 1 tbsp fresh basil (chopped)
- 2 tbsp butter (melted, for toasting buns)
Instructions
Prepare the Chicken
Pound the chicken breasts to an even thickness and season with salt and pepper.Set Up the Breading Station
Place flour in one shallow dish. In another, whisk together eggs and milk. In a third, mix breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper.Bread the Chicken
Dredge each chicken piece in flour, dip into the egg mixture, and coat thoroughly in the breadcrumb mixture, pressing firmly to adhere.Fry the Chicken
Heat oil in a skillet over medium heat. Fry chicken for 3–4 minutes per side until golden brown and cooked through (internal temp: 165°F). Transfer to a wire rack.Melt the Cheese
Preheat the oven to 400°F. Place chicken on a baking sheet, spoon marinara sauce over each piece, and top with mozzarella and Parmesan cheese. Bake for 5 minutes or until cheese is melted and bubbly.Toast the Buns
Brush hoagie rolls with melted butter and toast in the oven for 2–3 minutes until golden brown.Assemble the Sandwiches
Place the cheesy chicken on the toasted buns. Sprinkle with fresh basil, close the sandwiches, and serve warm.
