Ingredients

Scale

For the Chicken

  • 2 large boneless, skinless chicken breasts (halved lengthwise)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tbsp milk
  • 1 ½ cups Italian-style breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup vegetable oil (for frying)

For Assembly

  • 4 hoagie rolls or sub buns
  • 1 ½ cups marinara sauce
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 tbsp fresh basil (chopped)
  • 2 tbsp butter (melted, for toasting buns)

Instructions

  • Prepare the Chicken
Pound the chicken breasts to an even thickness and season with salt and pepper.

  • Set Up the Breading Station
Place flour in one shallow dish. In another, whisk together eggs and milk. In a third, mix breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper.

  • Bread the Chicken
Dredge each chicken piece in flour, dip into the egg mixture, and coat thoroughly in the breadcrumb mixture, pressing firmly to adhere.

  • Fry the Chicken
Heat oil in a skillet over medium heat. Fry chicken for 3–4 minutes per side until golden brown and cooked through (internal temp: 165°F). Transfer to a wire rack.

  • Melt the Cheese
Preheat the oven to 400°F. Place chicken on a baking sheet, spoon marinara sauce over each piece, and top with mozzarella and Parmesan cheese. Bake for 5 minutes or until cheese is melted and bubbly.

  • Toast the Buns
Brush hoagie rolls with melted butter and toast in the oven for 2–3 minutes until golden brown.

  • Assemble the Sandwiches
Place the cheesy chicken on the toasted buns. Sprinkle with fresh basil, close the sandwiches, and serve warm.

Notes

  • Air Fryer Option: Cook the breaded chicken at 375°F for 12–15 minutes, flipping halfway through.
  • Extra Crunch: Double-coat the chicken for an ultra-crispy crust.
  • Spicy Kick: Add red pepper flakes to the marinara or mix cayenne into the breadcrumbs.
  • Storage: Leftovers can be stored in an airtight container for up to 3 days. Reheat in the oven for best results.
