Ingredients
For the Quesadilla:
- 2 large flour tortillas (soft and fresh)
- 1 cup cooked chicken (shredded or diced)
- 4 slices crispy bacon (crumbled)
- 1 cup shredded cheese (cheddar, mozzarella, or Monterey Jack)
- 2 tbsp ranch dressing (plus extra for dipping)
- 1 tbsp butter or oil (for cooking)
Optional Add-ins:
- ¼ cup green onions (chopped, for extra flavor)
- Sliced jalapeños (for a spicy kick)
- ¼ tsp garlic powder & paprika (to season the chicken)
Instructions
In a skillet over medium heat, cook the bacon until crispy. Remove from the pan, place on a paper towel, and crumble into small pieces.
If using leftover or rotisserie chicken, you can use it as-is. Otherwise, season raw chicken with garlic powder, paprika, salt, and pepper, then cook it in the same skillet until fully done. Dice or shred the chicken.
Lay a tortilla flat and spread a thin layer of ranch dressing over one side. Sprinkle half of the cheese, chicken, bacon, and any add-ins evenly across the tortilla. Top with the remaining cheese, then place the second tortilla on top.
Heat a nonstick skillet over medium heat and melt butter or oil. Place the quesadilla in the pan and cook for 2-3 minutes per side until golden brown and crispy. Press down gently with a spatula to help melt the cheese.
Remove the quesadilla from the pan, let it cool for a minute, then slice into wedges. Serve with extra ranch, sour cream, salsa, or guacamole!
